Doreen's Sausage and Penne with Spicy Tomato Sauce

3 tbsps. olive oil
4 garlic cloves, minced
1/4 to 1/2 tsp. red pepper flakes(1/2 tsp makes it very hot)
1 can (28 oz.) plum tomatoes, pureed
1 tsp. salt
1/2 tsp. pepper
1/3 cup chopped fresh basil or parsley(if not available, use 1 tsp. dried basil)
1/2 cup brown sugar(or to taste)
1 lb. penne
2 tbsp. butter
1/2 cup grated Parmesan cheese


In a large skillet, heat oil. Add garlic and pepper flakes; cook until fragrant but not browned. Stir in tomatoes, and pepper; cook for 15 minutes or until thickened. . Add dry basil or if using fresh, only half; add brown sugar and simmer until thick. (Sauce can be made ahead to this point. Reheat just before cooking pasta.)

Cook penne to pkg. directions. Drain well. Transfer to large serving dish. Pour sauce over and add butter; sprinkle with Parmesan and remaining basil. Toss well.
