Ravioli

Ravioli Dough 
  
3 cups flour  
1/4 tsp. salt  
2 eggs 
1/3 cup water 

  
Stir flour and salt together. Form a well in center. Add eggs and blend 
with flour. Stir in enough water to form very stiff dough. 

Turn out onto lightly floured work surface. knead until dough is smoothe and elastic, about 10 minutes. Cover and let rest for 10 minutes. 

  
Cheese Filling 
  
2 cups ricotta cheese  
2 eggs  
3/4 cup parmesan cheese  
pinch of nutmeg and pepper 
 

Mix above well. 

 
Meat Filling 
  
3/4 lb. ground beef or your favorite mix of pork, beef, veal etc  
1/4 cup bread crumbs  
2 tbs. grated parmesan  
1 egg  
1 tbs. parsley  
1/2 tsp. garlic salt  
1/4 tsp. pepr 
 

Combine and mix well. Refrigerate until ready to use.
