Pasta with Garlic and Pistachio Nuts
3 tablespoons parsley coarsely chopped
2 cloves garlic
1 cup Pistachio nuts
1/2 cup Asiago or Parmesan cheese grated
1/4 cup Olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
12 ounces Rotelle Pasta cooked al dente and drained
4 tablespoons butter cut into small pieces
In food processor, combine parsley, garlic and nuts and process to a paste. Add the cheese, olive oil, lemon juice, salt and pepper and process until well blended.
Toss the hot pasta with butter until butter has melted. Lightly toss in the garlic, pistachio and cheese mixture.
Serves 4
