Salad: Cold Noodle Salad

Cold Sesame Noodles

2 TBL. vegetable oil, eyeball it
1/3 cup Tamara dark soy sauce (remove jigger top and pour out 4 splashes)
1 TBL. dark sesame oil, eyeball it
3-4 pinches cayenne pepper, 1/4 tsp.
3 TBL. creamy peanut butter (warmed 15 seconds in microwave at high)
1/2 lb. vermicelli pasta (cooked to al dente, cooled and drained)
1 cup shredded cabbage and carrot (use packaged cole slaw mix)
2 scallions, thinly sliced at an angle
1/4 lb. fresh pea pods (cleaned and thinly sliced on an angle)
2 TBL. sesame seeds (a handful) lightly toasted


Whisk vegetable oil, soy sauce, sesame oil, pepper and peanut butter to combine. Toss cooked, cooled pasta with coleslaw mix, scallions and pea pods. Pour sauce over noodles and toss to coat evenly. Garnish with a generous sprinkle of sesame seeds.
