Sauce: Easy Tomato Sauce

Easy Tomato Sauce

2 tsp. olive oil
1 medium onion, diced
1 tsp. minced garlic (about 3 large cloves)
1 can (28 oz./796 ml.) diced plum tomatoes, undrained
1 can (5-1/2 oz.) tomato paste
2 tsp. dried basil
1 tsp. dried oregano
1/2 tsp. chili powder (or more to taste)
1/8 tsp. black pepper (or more to taste)


In a small fry pan, heat oil over medium-high heat. Saute onion until tender, add garlic and saute about 1 minute more or until you can start to smell the garlic.

Pour diced tomatoes into a 2-1/2 quart saucepan and using a hand blender, gently pulse tomatoes until most of the lumps are gone. You could also use a food processor for this step.

Stir in tomato paste, basil, oregano, chili powder and pepper along with onions and garlic. Cover and heat over medium-low heat, stirring occaisionally, until warmed through.

This sauce is excellent with hot Italian sausages and a Ceasar salad
