Seafood: Spicy Shrimp Pasta

Spicy Shrimp Pasta

1 med onion, chopped finely
3/4 cup red pepper chopped finely
1/2 med green pepper, chopped finely
3 T olive oil
salt and pepper
cayenne pepper or Cajun seasoning, to taste
1 med ripe tomato, chopped finely or 1 T ketchup
6 cloves garlic, minced
1 T butter
1 lb shrimp, peeled deveined and cooked (can use frozen)
1 lb cooked noodles (short pasta, bow ties, rotini or cork screws)
1/4 cup fresh grated Parmesan cheese and 1/4 cup cheddar cheese, shredded combined
chopped flat leaf parsley


Saute onions, peppers in olive oil and lightly season with salt pepper cayenne pepper and Cajun seasoning and saute til onions are translucent.

When veggies are crisp tender and onions are translucent add tomato or ketchup, butter and garlic and more seasoning lightly and saute another 2 to 3 minutes. If noodles are cold add them next if they are hot then add shrimp next and mix well til heated through and then add noodles and adjust seasonings again. (all seasonings, not just salt and pepper, but cayenne and Cajun seasoning as well). Warm through completely til hot. Sprinkle with more Cajun seasoning and add cheese to top of dish and spoon onto dishes. Garnish with parsley.
