Jumbo Shells with Cheese Filling
1 pkg. (12 oz.) jumbo shells
2 lb. Ricotta cheese
1/2 cup grated Parmesan cheese
2 slightly beaten eggs
1 Tbl. chopped parsley
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg
32 oz. Spaghetti sauce
2 cups shredded mozzarella cheese
Cook pasta as directed on pkg. Rinse in cold water and drain.
Meanwhile, combine cheeses, eggs, parsley, salt,pepper, and nutmeg; blend well.
Cover bottom of 9x13 baking dish with some of the sauce.
Fill cooked shells immediately with cheese mixture. Arrange shells in single layer in baking dish.
Pour remaining sauce of tops of shells. Bake at 350 for 30 minutes.
