Spaghetti Sauce

Spaghetti Sauce

4 Tbl. Olive Oil
4 Cloves Garlic Chopped
1/2 cup dry white wine
1 (8 oz.) can of tomato sauce
10 Roma tomatoes diced (do not skin or seed them)
salt and pepper to taste
1 Tbl. sugar
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1 lb. thin spaghetti or capellini (angel hair pasta)


Heat saute pan and add oil till it is nice and hot. Add the garlic till it starts to become aromatic and then add the white wine. Cook till the wine reduces to half and then add the Roma tomatoes and tomato sauce. Add salt, pepper and sugar and cook for 10 to 15 minutes. Taste and add more salt, pepper or sugar if needed. Add the basil and parsley and cook another minute or two and toss with cooked pasta which has been drained.

Do not rinse the pasta in cold water. I usually start my pasta water boiling while I am making the sauce as it goes so fast.
