Summer Pasta

  8 plum tomatoes  
  1 lb. brie (rind removed)  
  1/2 to 1 cup fresh basil 
  4 cloves garlic minced 
  1 cup olive oil 
  1/2 cup black olives 
  salt and pepper to taste 
  1 1/2 lb. linguine 
  freshly grated Parmesan cheese 


  Prepare ahead of time: 

  In large serving bowl combine tomatoes, chopped brie, basil, garlic, 
  olive oil, black olives and salt and pepper. Cover and set aside at 
  room temperature for 1-2 hours. 

  When you are ready to serve prepare pasta al dente, drain and toss with 
  the tomato sauce. The heat of the pasta will bring out the flavors and 
  further melt the brie to make a rich creamy sauce. Top with Parmesan 
  cheese and serve immediately
