Sun Dried Tomato Tofu Pasta

1 Tbl. veg. oil 
3 cloves garlic, minced (more or less to taste) 
3/4 cup fresh basil,chopped 
1 cup sun dried tomatoes, rehydrated and julienned 
14 oz. pkg. firm tofu 
1 small green pepper, julienned 
1 small yellow pepper, julienned 
1/2 cup chicken broth 
3 cups spaghetti, cooked 


Saute' garlic, basil and tomatoes in oil until basil begins to wilt. 
Add the tofu and peppers and continue to cook on low heat until peppers 
begin to soften, about 10 minutes. Add chicken broth, cover and simmer for 5 minutes. 

Toss mixture with hot cooked spaghetti. 

Serves 4 - 305 calories- 0 cholesterol 24% fat calories
