Tortellini and Shrimp

Shrimp and Tortellini


1 pound uncooked medium shrimp
1 (9 oz.) pkg fresh tortellini with cheese filling
1/3 cup butter or margarine
1 shallot, minced
2 tbls. chopped fresh basil or 2 tsp. dried
1/2 cup grated Parmesan cheese
Garnish: Fresh basil


Peel and devein shrimp, set aside Cook pasta according to pkg. directions, drain and set aside.

Melt butter in large skillet over medium heat; add shrimp, minced shallot, and basil. Cook about 5 minutes, stirring constantly. Add pasta and cheese. Toss gently and garnish.

Yield: 4 servings
