Day-After-Thanksgiving Noodles

1/3 cup butter
1 cup celery, thinly sliced
1/2 cup chopped onion
8 cups chicken broth
1 16-oz. package frozen egg noodles
1/2 tsp. salt
1/4 tsp. black pepper
2 cups cooked turkey, cubed
1/4 cups fresh parsley
1 tsp. sage

Cook’s Note: For a thicker consistency, stir together 1 tablespoon flour and 1/4 cup cold water until smooth. Stir into turkey and noodles and bring to a boil. Cook about two additional minutes until smooth and thickened, stirring occasionally.


Heat butter in Dutch oven over medium heat until melted. Add celery and onion and cook until tender, about 3 to 5 minutes, stirring occasionally. Add broth and bring to a boil. Stir in noodles, salt and pepper and simmer, uncovered, about 35 minutes or until noodles are tender, stirring occasionally. Stir in turkey and parsley and heat through.

Serves 4
