Vegetable Lasagna Roll Ups
1/2 lb. lasagna noodles (any brand)
Filling:
1 lb. Ricotta cheese
4 oz. Mozzarella cheese
2 small broccoli stalks with florets, cooked and chopped(2 cups)
1 cup finely chopped mushrooms
2 Tbsp. finely cut chives or scallions
1 1/2 tsp. oregano
1/4 cup chopped parsley
Tomato Sauce:
4 large tomatoes, peeled,
seeded and chopped, or 1 (15 oz.)
can tomatoes
1 tsp. dried basil
1 tsp. oregano
1 Tbsp. sugar
1 garlic clove, chopped
1 bay leaf
1/4 tsp. salt
1/4 tsp. pepper
Preheat oven to 350 degrees. Boil lasagna until tender; drain and lay on a towel to dry.
Filling: Combine all ingredients in a bowl. Spoon about 1/3 cup of mixture onto each lasagna strip. Spread over noodles and roll them up.
Tomato Sauce: Combine sauce ingredients. Spoon some sauce on bottom of ovenproof baking dish and place rolls, seam side down in dish. Pour remaining sauce over rolls and cover
with foil. Bake 20 minutes; remove foil and bake 15 to 20 minutes.
