Rice and Vermicelli (Rizi Me Fithi)
2 oz. butter
1 oz. vermicelli
12 oz. basmati rice - washed
1 tsp. lemon juice
1 3/4 pints water or stock
Melt the butter. Add the vermicelli and brown well.
Add the rice and mix in very well. Season with salt and pepper
Add 1 teaspoon of lemon juice and the stock. Mix again.
Bring to the boil, cover and simmer for 15-20 minutes until rice is cooked.
