Baked Ziti Italian Style

1 package ziti -- (16 ounce) or rigatoni
1 large onion -- chopped
3 garlic cloves -- minced
1 can tomatoes crushed in puree -- (28 ounce)
2 teaspoons Italian seasoning
1/4 teaspoon crushed red pepper flakes
salt and pepper to taste
1/2 cup egg substitute
1 container fat free ricotta cheese -- (15 ounce)
2/3 cup shredded fat free mozzarella cheese
1/2 cup grated fat free parmesan cheese


Bring a large pot of salted water to a boil, add the ziti, and cook 10-12 minutes,or until tender but still firm. Drain and set aside.

Preheat the oven to 325 degrees. Lightly coat a 13x9x2 inch baking dish with vegetable oil cooking spray.

In a large nonstick pan, over medium heat, saute the onion and garlic, stirring constantly, for about 1 minute. Stir in the tomatoes and puree, Italian seasoning,and pepper flakes. Cover and cook for 10 minutes, or until the onions are soft. Season with salt and pepper to taste.

In a small bowl, blend together the egg substitute and ricotta cheese until smooth.

Place the drained pasta in an even layer in the prepared baking dish. Cover with a layer of the ricotta mixture and top with tomato mixture. Sprinkle with the mozzarella and the Parmesan. Bake uncovered for about 45 minutes or until golden brown on the top and bubbling. Let stand 5 minutes before cutting and serving.
