Cream Puffs

1 cup water
1/2 cup butter or margarine
1 cup flour


Preheat oven to 400° F.

Bring first two ingredients to a boil. Stir in flour, stirring constantly until mixture leaves the pan and forms a ball(about 1 minute).

Drop in 8 mounds onto ungreased cookie sheet. Bake at 400' for 45-50 minutes until browned. Fill with vanilla cream pie filling (below)


Filling:
2/3 cup sugar
1/2 tsp. salt
2 1/2 Tbl. cornstarch
1 Tbl. flour
3 cups milk
3 egg yolks
1 Tablespoon butter or margarine
1 1/2 teaspoons vanilla
baked pie shell


In a saucepan, combine sugar, salt, cornstarch and flour. Stir in gradually milk. Cook over moderate heat, stirring constantly until mixture thickens and boils. Boil 1 minute.

Take out about 1/4 cup (don't have to measure), put in small bowl and mix with egg yolks. Stir well. (if you add the egg yolks all at once to the larger portion, it will curdle). Add egg yolk mixture to rest of pudding.

Return to heat and boil 1 minute more. Stirring constantly. Remove from heat. Blend in 1 Tbl. butter or margarine and 1 1/2 tsp. vanilla. Cool a little. Pour in baked pie shell or fill cream puffs.
