Swedish Rosettes
2 eggs
2 tsp. sugar
1 cup milk
1 cup all-purpose flour
1 Tbsp. lemon or vanilla
extract
1/2 tsp. salt
Beat eggs slightly. Add sugar and milk. Stir in flour
and salt. Beat until smooth. Should be consistency of heavy cream. Add extract.
Fill deep fryer 2/3 full of oil and heat to 400 degrees. Dip rosette irons into hot oil. Shake off excess and dip into batter only 3/4 their depth, then in hot oil. With fork ease rosettes off iron onto paper towel. While warm, dip in confectioners sugar.
