Nut Rolls

4 1/2 cups flour
2 tablespoons sugar
2 cakes yeast crumbled
1 3/4 cups margarine or butter
1 cup milk
6 egg yolks
Filling (recipe below)


Combine flour, sugar and yeast. Cut in butter or shortening as for pie dough.

Combine milk and egg yolks and add to flour mixture. Mix until dough draws away from sides of bowl. Divide into 3 parts. Wrap in plastic wrap and refrigerate overnight.

Roll out on floured board into rectangles 1/8 inch thick. Spread with filling and roll like jellyrolls. Place on ungreased cookie pans. Let rise for 1 hour.

Preheat oven to 350° F.

Bake at 350 degrees in preheated oven for 50 minutes. Cool and frost with confectioners' icing.


Filling:
6 egg whites at room temperature
2 cups sugar
1 or more pounds ground walnuts


Beat whites until stiff; fold in sugar, nuts and vanilla.

Note: Pricking dough as it is rolled helps keep rolls from cracking.
