Strudel
Follow directions on box for Phyllo, or Puff Pastry
Filling for Apple Strudel:
2 lbs. apples, peeled and chopped
1/4 cup raisins
3/4 cup sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg.
1/2 cup breadcrumbs
1/4 cup melted butter
1/2 tsp. grated lemon rind
1 tsp .lemon juice
Pinch of salt
Mix all ingredients, and spread on strudel dough, roll up strudel lke a jelly roll and bake, according to temperatures given on box for dough.
Filling for Cheese Strudel:
3 egg yolks
4 tsp. butter
1/2 cup sugar
1/2 tsp. vanilla
1/2 cup sour cream
pinch of salt
1 tsp. grated lemon rind
3 tbsp. raisins
1 lb. cottage cheese, rubbed through a strainer
3 egg whites, stiffly beaten
Cream the egg yolks with butter, sugar and vanilla until light. Blend while whisking sour cream, raisins, lemon rind and salt. fold egg whites into the strained cottage cheese, mix with other ingredients. Fill and bake the strudel following instructions given
on box of dough
