Maids of Honor
1 dozen unbaked tarts, you can use Pillsbury pie dough and using a 2" cutter cut circles to make tarts
1/4 cup butter at room temperature
1/4 cup granulated sugar
1 egg
2 tsp. brandy flavoring or brandy
1/2 cup flour
3 Tbl. powdered sugar
seedless raspberry jelly
Preheat oven to 350.
Line mini-muffin cups with pie dough.
In tart shells place 1/2 tsp. raspberry jelly in botton of shell.
In a medium bowl cream butter, sugar until light and fluffy.
Beat in the egg and stir in the brandy flavoring.
Gently and thoroughly fold in flour.
Spoon mixture into pastry shells.
Bake for 20 to 30 minutes or until pastry is browned and filling springs back when lightly touched.
Carefully remove from pans and cool on wire rack.
Dust with powdered sugar before serving and when cool.
