Apple-Cranberry Pie with Cheddar Cheese Crust

Crust:
2 cups flour
1/2 teaspoon salt
1/3 cup shredded cheddar cheese
1/3 cup shortening
6 tablespoons cold butter -- cut in small pieces
1/4 cup cold water

Filling:
1 1/2 cups sugar
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons flour
7 cups thinly sliced, peeled, cored apples -- (about 2 to 2-1/2 lbs)
3/4 cup coarsely chopped fresh or frozen cranberries
2 tablespoons cold butter -- cut in small pieces
Milk and sugar for topping


Preheat oven to 425° F.

Crust:
Combine flour, salt and cheese in a large bowl; mix to combine. Cut in shortening and butter until particles are the size of peas. Sprinkle in cold water, 1 tbl at a time, and mix with fork judt until dough comes together in a ball. Do not over mix. (If dough is too soft to handle, press gently into disk and refrigerate 20 min.)

Divide dough in 2 pieces. Roll out 2 circles a bit bigger than a 9" pie pan.

Brush off excess flour, then gently roll crust onto rolling pin. Unroll crust into pie pan; ease crust into pan. Roll crust over at the edges, trimming off excess dough. Crimp with fingers to make edge. Cover with plastic wrap.

Filling:
Mix sugar, cinnamon, nutmeg, flour, apples and cranberries in a large bowl.

Mound apple mixture evenly in pastry-lined pie pan. Dot apples with butter and cover with top crust.

Seal and flute edges of crust with fingertips. Make several slits on top to allow steam to escape. For shiny, sugary top, brush crust lightly with milk and sprinkle with sugar.

Bake at 425 degrees 10 min, then reduce temp. to 375 degrees and bake 50 min. or until crust is nicely browned and apples are cooked through.
