Apple Cranberry Pie

2 crusts
6 large Golden Delicious apples, peeled, halved, cored, and cut into 8 wedges each.
1 cup fresh or frozen cranberries
2 teaspoons finely grated orange zest
1 cup sugar
3 Tablespoons all purpose flour
1/8 teaspoon salt
1 large egg, beaten with 1 Tablespoon milk.


Preheat oven to 400 degrees.

In a large bowl, toss together apples, cranberries, orange zest, sugar, flour and salt. Pour into first pie shell. Brush the edges of the shell with the egg wash and cover with the second dough round, lightly pressing the edges together. Trim any over hanging dough to 1 inch; fold dough under and crimp to seal. Brush the top crust with the egg wash, avoiding the decorative with trim as it tends to brown to quickly. Make 4 small slashes in the top crust for venting.

Set the pie on the middle shelf of oven and place a baking sheet to catch any drips. (how about using a piece of foil?) Bake the pie about 1 hour and 10 minutes or until the crust is light golden and the juices bubble. Cover the pie loosely with foil during the last 15 minutes to prevent excessive browning. Allow the pie to cool 20 minutes on a rack. Serve while still warm.

Note: if you did not want to use a top crust you could make a crumb crust and then you would not need the egg wash.

Crumb topping:
3/4 cup flour
1/2 cup sugar
1/2 teaspoon cinnamon
1/3 cup butter or margarine

Mix together with two table knives or pastry blender until crumbly. Sprinkle on top of pie and bake according to directions
