Fried Apple Pies

2 tablespoons butter
2 pounds apples
1/2 teaspoon cinnamon
1 dash nutmeg
1/4 cup sugar
1/4 cup light brown sugar
1 1/2 cups water
1 tablespoon lemon juice
1 1/2 tablespoons cornstarch
1 tablespoon water
1 teaspoon vanilla

Crust:
3 cups flour
2 teaspoons sugar
1 1/2 teaspoons salt
1/4 teaspoon baking powder
6 tablespoons shortening
1 egg
3/4 cup milk


In a saucepan melt butter. Add apples, cored, peeled and diced. Saute for 2 minutes. Stir in cinnamon, nutmeg, sugar and brown sugar. Saute for 1 more minute. Add water and lemon juice. Bring to a boil.

Dissolve cornstarch in 1 tbsp. water and vanilla. Add to apple mixture. Reduce heat and simmer 15 minutes, or until apples are tender. Remove from heat and cool completely.

For the crust, in a bowl add flour, sugar, salt and baking powder. Cut in shortening. In a small bowl beat egg and milk together. Add egg mixture to the flour mixture. Pull into 12 equal parts. Roll each out into a 5" circle. Spoon 1/4 cup of apple filling into the center of each. Fold over and crimp edges with a fork.

Deep fry 2-3 at a time until golden brown. Drain on paper towel. Sprinkle with confectioners sugar if desired.
