Apricot Sour Cream Pie
2 cups dried apricots, cooked according to pkg. directions
1/2 cup sour cream
1 tsp. salt
1 (9") pie shell, unbaked
1/4 cup sugar
3 Tbs. flour
1/2 cup honey
Preheat oven to 425° F.
Drain fruit, if necessary and quarter. Beat egg and add sugar, sour cream, flour and salt. Beat well. Add honey.
Arrange apricot pieces evenly in pie shell.
Pour egg mixture over fruit and bake at 425º for 30 to 35 minutes or until almost set in the center. Remove from oven.
Finish cooking just before serving.
