Becki's Vanilla, Coconut or Banana Cream Pie

2/3 cup sugar
1/2 tsp. salt
2 1/2 Tbl. cornstarch
1 Tbl. flour
3 cups milk
3 egg yolks
1 Tablespoon butter or margarine
1 1/2 teaspoons vanilla
baked pie shell

In a saucepan, combine the first 4 ingredients. Stir in gradually milk. Cook over moderate heat, stirring constantly until mixture thickens and boils. Boil 1 minute. Take out about 1/4 cup (don't have to measure), put in small bowl and mix with 3 egg yolks. Stir well. (if you add the egg yolks all at once to the larger portion, it will curdle). Add egg yolk mixture to rest of pudding.

Return to heat and boil 1 minute more. Stirring constantly. Remove from heat. Blend in 1 Tbl. butter or margarine and 1 1/2 tsp. vanilla.

Cool a little. Pour in baked pie shell or fill cream puffs.

Banana Cream Pie

Follow above recipe. Slice 3 bananas over bottom of baked pie shell before adding filling. Top with meringue.(recipe below)

Coconut Cream Pie

Follow above recipe. Add 3/4 cup coconut after vanilla. Top with meringue.(recipe below) Sprinkle with coconut over meringue before baking it.


Beat 3 egg whites and 1/4 tsp. cream of tartar until frothy. Gradually beat in 6 Tbl. sugar, a little at a time. Continue beating until stiff and glossy. Pile meringue over whole pie. swirl to points with bottom of spoon.

Bake at 400' for 8-10 minutes until delicately browned.
