Bean Pie

2 cups white beans, cooked
1/2 cup milk
1 cup sugar
2 eggs, well beaten
2 2/3 tbsp butter (approximately 1/3 stick)
1 tsp vanilla
1 unbaked pie shell


Preheat to 425 F.

Put cooked beans in a blender and chop. Combine all ingredients, mix, and pour into an unbaked pie shell.

Bake for 10 minutes at 425. Reduce heat to 350 and bake for 30 to 35 minutes more.

Test by inserting a knife midway between center and edge of pie. If knife comes out clean, pie is done.

Note: Unusual but interesting dish.
