Butterscotch Pie

1/3 cup flour
1 cup firmly packed brown sugar
1/4 tsp salt
2 cup milk
3 tbsp butter
3 egg yolks, slightly beaten
1/2 tsp vanilla
1 (9 inch) pie shell, baked
1 cup chilled whipping cream
2 tbsp sugar
1/4 cup chopped pecans, optional


Mix flour, brown sugar and salt in a medium saucepan. Add the milk and cook over medium heat, stirring constantly, until mixture comes to a boil and thickens. cook, stirring constantly, 2 minutes more.

Remove from heat and add a small amount of the cooked mixture to the beaten egg yolks, stirring constantly, then stir the egg mixture into the cooked mixture. Return to heat and boil 1 minute, stirring constantly.

Remove form heat. Stir in the vanilla and the butter. Let cool slightly, the poor into the baked, cooled pie shell. Cover with plastic wrap and chill at least 2 hours.

In a small bowl, whip together the sugar and whipping cream. To serve, swirl the whipped cream on the top of the pie and garnish with pecans if desired.
