Butterscotch Pie

Mom's Butterscotch Pie

3/4 cup packed brown sugar
2 Tbl. butter
1 Tbl. flour
1 cup cold milk, divided
1 egg seperated (save white)
1 tsp. vanilla
1/4 tsp. salt
1 tsp. sugar


Preheat oven to 450° F.

Heat brown sugar and butter in double boiler, stirring till smooth. Remove.

Blend together flour and 1/4 cup of the milk. Add remaining milk gradually, mixing till smooth. Add gradually to sugar mixture, stirring well.

Bring to boil and cook 1-2 minutes longer. Stir small amount hot mixture into beaten egg yolk. Return to double boiler and cook about 5 more minutes, stirring slowly. Remove and blend in extract and salt.

Bake 450 degrees for 10 minutes, then at 350 degrees for about 20 minutes more.

Beat egg white till frothy, add sugar. Top pie and bake at 350 degrees about 10 minutes.
