Cappuccino Mousse Pie

1 1/2 cups (9 oz.) semisweet chocolate chips
2 cups (16 oz.) heavy whipping cream
3 TBSP. Instant-coffee granules
2 TBSP. Granulated sugar
1 tsp. Vanilla
1 (6 oz.) ready to fill graham cracker or chocolate flavored crumb crust

Melt chocolate chips over very low heat until smooth.

Mix cream, coffee, granulated sugar and vanilla in a large bowl until granules dissolve. Beat with electric mixer on high speed until stiff peaks form.

Remove and reserve 1 1/2 cups coffee whipped cream. Gently stir (fold) melted chocolate into remaining whipped cream until well blended. Spread evenly in crust.

Spread and swirl reserved coffee whipped ream over mousse. Chill until set, a t least 1 hour.

Garnish before serving with chocolates shavings or raspberries.
