Chocolate Mudslide Pie

1 cup semisweet chocolate chips
1 teaspoon instant coffee
1 teaspoon hot water
3/4 cup sour cream
1/2 cup granulated sugar
1 teaspoon vanilla
1 (9 inch) prepared chocolate crumb crust
1 cup confectioners' sugar
1/4 cup unsweetened cocoa
1 1/2 cups heavy cream
2 tablespoons semisweet mini chocolate chips, optional
Melt 1 cup of chocolate chips and cool ten minutes.
In a small bowl, dissolve coffee in water. Add sour cream, granulated sugar and vanilla and stir until sugar is dissolved. Blend in melted chocolate and spread in crust; set aside.
In a small mixing bowl, beat confectioner's sugar, cocoa and cream until stiff peaks form. Spoon mixture into crust, or pipe into crust with a pastry bag fitted with a star tip. Sprinkle with mini chips, if desired. Cover and refrigerate at least 4 hours.
