Chocolate: Mile-High Mud Pie

Mile-High Mud Pie
from Kathy Rash, Washington

2 cups peanut butter
1 cup powdered sugar
11 whole graham crackers, crushed
1/2 gal. vanilla ice cream, softened
one can of Hershey's brand fudge topping
1/2 gal. Mud Pie or other chocolate-flavored ice cream, softened
melted caramel (optional)
whipped cream (optional)
cherries (optional)



Mix first three ingredients together. Sprinkle the bottom of a springform pan with cocoa powder. Press graham cracker mixture into the bottom of pan and partway up the sides.

Spread the vanilla ice cream over crust. Let it set in freezer for 1 hour.

Spread the fudge topping over ice cream, then the chocolate ice cream over fudge. Freeze several hours or overnight.

To serve, slice with a hot knife. Serve with optional toppings.
