Mississippi Mud Pie

2 eggs
1 cup sugar
1/2 cup butter or margarine, melted
1/2 cup unsifted all-purpose flour
1/3 cup cocoa
1/4 tsp. salt
1 tsp. vanilla
1/2 cup shopped nuts (optional)
Ice Cream
Hot Fudge Sauce


Preheat oven to 350 degrees F.

Beat eggs in small mixer bowl. Blend in sugar and melted butter or margarine. Combine flour, cocoa and salt; add to butter mixture. Stir in vanilla and nuts. Pour into lightly greased 8" pie pan. Bake at 350 degrees for 25-30 minutes or until almost set (pie will not test done). Cool.

Cut into wedges and served topped with ice cream and hot fudge sauce. 6-8 servings.


Hot Fudge Sauce:
3/4 cup sugar
1/2 cup cocoa
1-5 oz. can evaporated milk
1/3 cup light corn syrup
1/3 cup butter or margarine
1 tsp. vanilla


Combine sugar and cocoa in a small saucepan. Blend in evaporated milk and corn syrup. Cook over medium heat, stirring constantly. until mixture boils. Boil and stir 1 minute. Remove from heat. Stir in butter or margarine and vanilla. Serve warm.
