Coconut Chess Pie
4 eggs, beaten
1-1/2 cups sugar
1/2 cup margarine, melted
1 Tblsp. vinegar
1 tsp. vanilla extract
1/2 tsp. salt
1 cup flaked coconut
1 unbaked pie shell
toasted flaked coconut (optional)
Preheat oven to 325°F.
Combine eggs, sugar, margarine, vinegar, vanilla and salt; beat well. Stir in 1 cup coconut; pour into pastry shell.
Bake in preheated oven at 325 degrees for 45 to 50 minutes or until set.
Cool on a wire rack.
Garnish with toasted coconut, if desired.
Yield: 1 (9-inch) pie.
