Coconut Cream Pie

2/3 cup sugar
1/2 cup flour
1/8 tsp. salt
2 cups milk
2 beaten egg yolks
1 1/2 tsp. vanilla
1 cup coconut
In a saucepan, combine sugar, flour and salt; add milk and egg yolks. Cook over medium heat until thick. Add vanilla and coconut.Put into a baked pie shell. Use the egg whites for meringue.
Meringue:
2 eggs whites
1/4 cup sugar
1/4 tsp salt
1/4 cream of tarter
1 tsp vanilla
Beat egg whites with salt and vanilla to fine foam stage. Gradually beat in sugar and 1/4 tsp. cream of tarter. Beat this real stiff. Spread over warm pie filling. Bake about 8 minutes until lightly browned
Cool thoroughly before cutting
Makes one 9 inch pie.
NOTE: Fill prebaked pie shell with cream filling as close to serving time as possible so that it does not get soggy.
