Coconut Praline Pie
1/2 cup chopped pecans or walnuts
1/3 cup butter
1/3 cup packed brown sugar
1 deep dish pie shell, baked and cooled
2 envelopes Dream Whip
2 1/4 cups milk, divided
2 (4 oz) packages instant vanilla pudding mix
1 1/4 cup coconut
1 tsp. vanilla
In small saucepan over medium heat cook pecans, brown sugar and butter until melted and mixture comes to a boil; boil exactly 30 seconds.
Spread praline mixture into bottom of pre-baked pie shell.
In large bowl beat Dream Whip, 1 cup milk and vanilla at high speed 6 minutes or until thick and peaks form.
Add remaining milk and pudding mixes, blend on low.
When blended beat on high for 2 minutes.
Stir in one cup of coconut.
Spoon mixture into pie shell.
Toast remaining 1/4 cup coconut and sprinkle on top for garnish.
Chill at least 4 hours before serving.
