Cran-Lorraine Pie

Braham's Pie Cookbook

1 single crust pie shell, Baked

Filling:
2 cups whole cranberry sauce (can be canned)
1 tablespoon cornstarch
1 tablespoon cranberry juice


Combine sauce and cornstarch bring to a boil. Boil one minute,remove from heat and stir in cranberry juice. Cool and take out 1 cup and set aside.

Candy mixture:
2 cups White chocolate (chopped) or vanilla milk chips
1 egg
1/4 cup water
1/3 teaspoon almond extract


Melt white chocolate, beat egg and water slightly.

Add small amount of melted chocolate to egg mixture, stir and return it all back to the heating pan and boil until thick about 5 minutes. Remove from heat. Add almond extract. Cool.

2 cups whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla
1/2 teaspoon almond extract


Beat whipping cream,powdered sugar and flavorings.

Mix 1/2 with candy mixture. Put 1/2 candy mixture in pie shell.

Add cranberry mix. Top with other half of candy mixture. Top with other half of whipping cream and decorate top with the 1/4 cup of cranberry mix. Keep refrigerated.
