8 oz. cream cheese, softened (can use light)
1/2 cup sugar
8 oz. can crushed pineapple, undrained
1 cup coconut
1 cup chopped pecans
8 oz. Cool Whip
1 large graham cracker crust OR 2 small
Mix cream cheese and sugar with mixer for 3 to 4 minutes on high. Stir in next 3 ingredients. Fold in Cool Whip.
Pour into graham cracker crust. Chill several hours.
Note: This makes a lot of filling. I made it with a large graham cracker crust, but you could probably divide it among two small crusts and put additional Cool Whip over the top, if desired.
