Creamed Cottage Cheese Pie
1 (9 inch) pastry shell-unbaked
1 1/2 cups creamed (small-curd) cottage cheese
4 tablespoons melted butter/margarine
1/2 cup sugar
1/4 teaspoon salt
1 tablespoon flour
Grated zest of 1 lemon
2 eggs
1/2 cup chopped nuts
1/4 cup milk
Preheat oven to 400° F.
Separate eggs.
Press cheese through a sieve 2 times.
Add butter, sugar, salt, flour, lemon zest, unbeaten egg yolks, chopped nuts and milk, stir well.
Beat egg whites until stiff peaks form.
Fold egg whites into cream cheese mixture.
Bake for 30 minutes or until browned and firm.
Makes 1-9 inch pie
