Pie Crust
by Deborah Faith Harris-Martin
1 pound lard
1 cup boiling water
2 teaspoons salt
2 teaspoons baking powder
4 1/2 cups flour
In a bowl put 1 lb. of lard and pour 1 cup of boiling water over it. Stir until lard is melted and then cool.
In a separate bowl combine salt, baking powder and flour. Then add the dry ingredients to the wet and mix well. Pour or scoop into a pie pan, cover with plastic wrap/wax paper or in a plastic bag and chill in the refrigerator.
When chilled, cut into 8 wedges and bag each triangle. Can either be kept in frig for up to two weeks or frozen and used as needed.
Makes 4, 9 inch double crusts and/or 8 single crusts.
