Grasshopper Pie

Grasshopper Pie

  1 1/2 cups chocolate wafer crumbs 
  1/2 cup butter or margarine, melted 
  3 cups miniature marshmallows or 32 large marshmallows 
  1/2 cup milk 
  1/4 c. creme de menthe 
  3 Tbsp. white creme de cacao 
  1 1/2 cup whipping cream, whipped 
  few drops green food coloring (if desired) 


Heat oven to 350 degrees. Mix wafer crumbs and butter thoroughly in 
9-inch pie pan; press evenly on bottom and sides. 

Bake 10 minutes. Cool. Combine marshmallows and milk in saucepan. 
Cook over low heat, stirring constantly, until marshmallows melt. 

Cool thoroughly and add liqueurs. Fold marshmallow mixture into 
whipped cream. Fold in food coloring. Pour into crumb lined  pan. 

Sprinkle grated semi-sweet chocolate over top if desired and chill 
at least 4 hours. 

Alexander Pie: Follow recipe for Grasshopper pie, except substitute 
1/4 cup dark creme de cacao for creme de menthe and 3 tablespoons brandy 
for creme de cacao.
