Hawaiian Ice Cream Pie
2 egg whites
1/4 tsp. cream of tartar
2 Tbls. sugar
2 2/3 Cups flaked coconut
1 quart vanilla ice cream
1 quart orange sherbet
Pineapple Sauce (recipe below)
Macadamia nuts, chopped, and toasted
1 Tbl. sugar
1 Tbl. water
1 tsp. cornstarch
1 tsp. lemon juice from concentrate
1 (8 oz) can crushed pineapple
1 Tbl. butter
In medium saucepan combine all ingredients for Pineapple Sauce except butter. Over medium heat, cook and stir until slightly thick. Stir in butter, cool.
Preheat oven to 350.
Beat egg whites and cream of tartar to soft peaks. Gradually add sugar, beating until stiff, but not dry. Fold in coconut.
Spread in 9 in. pie pan to form crust and bake until lightly brown. Cool.
Scoop ice cream and sherbet into crust.
