Batatelle's Key Lime Pie

Crust:
1-1/2 cups graham cracker crumbs
1 Tblsp sugar
pinch salt
6 Tblsp unsalted butter, melted
1/4 tsp vanilla

Filling:
6 egg yolks
1 (14 oz) can sweetened condensed milk
zest of 1 lime
4-1/2 oz Key lime juice
1 Tblsp lemon juice
whipped cream for topping


Preheat oven to 350 F.

Combine crumbs, sugar and salt in a bowl. Combine butter and vanilla and slowly mix into crumb mixture. Press into 9" pie pan. Bake at 350 for 10 minutes. Remove from oven and cool completely.

To prepare filling, combine egg yolks, milk and zest in a bowl. Gradually add lime juice and lemon juice. Stir until smooth and creamy.

Pour into prepared crust. Bake at 350 for 10 minutes. Chill and top with whipped cream before serving.
