Bob Hope’s Favorite Lemon Meringue Pie

Filling:
1 1/3 c. sugar
6 Tbsp. cornstarch
dash of salt
1 1/4 c. boiling water
3 egg yolks
1/3 c. lemon juice
2 Tbsp. margarine
2 Tbsp. lemon rind

Meringue:
3 egg whites
1 (7 oz.) jar marshmallow cream
dash of salt
1 (9-inch) pastry shell


Combine sugar, cornstarch and salt in saucepan; gradually add water, bring to boil, stirring constantly. Cook 1 minute until thick and clear. Stir small amount in beaten egg yolks and return to hot mixture. Cook 3 minutes, stirring constantly on medium heat. Stir in lemon juice, margarine and lemon rind. Pour into pastry shell.

Meringue: Beat egg whites and salt until soft peaks form. Add marshmallow cream, beating until stiff peaks form. Spread over filling to crust edge, sealing it. Bake at 350 degrees for 15 minutes until brown.
