Lemon Cake Pie

2 eggs, separated
2 Tbl. softened butter
1 cup sugar
2 cups buttermilk
2 Tbl. flour
Juice from 1 lemon, plus grated rind


Preheat oven to 350° F.

Mix egg yolks, sugar, flour, butter, buttermilk and lemon juice and rind until well blended. Fold in beaten egg whites. Bake in a unbaked 9 inch pie crust at 350 for 35 to 40 minutes.
