Lemon Pie Squares

Crust:
1 (18.25 oz) lemon cake mix (pudding in the mix)
1/4 cup margarine or butter softened
3 egg yolks
1 cup coconut

Meringue:
3 egg whites
1/2 cup sugar

Filling:
1 can lemon pie filling (22 ounce)


Heat oven to 350 degrees. In large bowl combine crust ingredients at low speed til crumbly. Press in bottom of ungreased 13 x 9 inch pan. Bake at 350 degrees for 10 minutes.

Meanwhile in small bowl, beat egg whites at medium speed til soft peaks form. Gradually add sugar 1 tablespoon at a time, beating at high speed til stiff glossy peaks form and sugar is dissolved.

Spread lemon filling over baked crust; spread meringue over lemon filling. Bake an additional 15 to 25 minutes or til meringue is light golden brown.

Cool completely; cut into squares. Garnish with citrus twists as desired. 12 servings.
