Orange Meringue Pie

Filling:
1 cup sugar
1/3 cup cornstarch
1 cup orange juice
1/2 cup water
4 egg yolks
2 tablespoons butter
2 tablespoons lemon juice
2 teaspoons grated orange peel
One baked 9 inch pie crust

Meringue:
4 egg whites
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup sugar


Preheat oven to 450° F.

In saucepan, combine sugar and cornstarch. Gradually stir in orange juice and water. Cook and stir over medium heat til mixture thickens and boils, 8 to 10 minutes.

Stir a little of the hot mixture into egg yolks, gradually add back to saucepan and continue to cook and stir 1 to 2 minutes longer, until thickened and smooth. Remove from heat; add butter, lemon juice and orange peel; stir to melt butter. Pour into pie crust; cool.

For meringue:
Beat egg whites with cream of tartar and salt til foamy. Gradually mix in sugar, beating until meringue is stiff. Spread over filling, sealing meringue at edges.

Bake in 450 degree oven about 3 minutes, until golden. Cool, chill. Makes one 9 inch pie.
