Shoo-Fly Pie
from Amish Cooking

2 cups molasses
2 cups hot water
1 cup light brown sugar
1 scant tsp baking soda
5 cups flour
2 cups light brown sugar
1 scant cup shortening
1/2 tsp baking soda
1/2 tsp cream of tartar
4 (9 inch) unbaked pie shells


Preheat oven to 450° F.

To make syrup:
Mix together the first four ingredients until they are dissolved. Use 1 cup or more of syrup for pie shell.

Mix the remaining ingredients until they form crumbs.

Pour the syrup into the unbaked pie shells, using 1 cup or more for each shell. Evenly divide the crumb mixture between the pies.

Bake for 10 minutes at 450. Lower heat to 375 and bake for 30 minutes. Lower heat (again) to 350 and bake for 30 minutes more. Yield: 4 pies

Variations: add 2 tsp of nutmeg and 3 tsp of cinnamon to the crumb mixture.



Lemon Sauce for Shoo-Fly Pie

2 tbsp cornstarch
1/2 cup sugar
1/4 tsp salt
2 cups boiling water
1/4 cup butter or margarine
3 tsp lemon juice
1 tbsp grated lemon rind


Mix the cornstarch, sugar and salt together in a saucepan. Gradually stir in the boiling water. Cook the mixture, stirring constantly, until it boils and becomes thick and clear. Remove from heat and stir in the remaining ingredients. Serve warm over Shoo-Fly pie. Yields: 2 1/4 c sauce.

Grandma's Shoo-Fly Pie
Favorite Amish Recipes

3/4 cup Grandma's molasses
3/4 cup cold water
1/2 tsp baking soda
1 (9 inch) unbaked pie shell
1 1/4 cups flour
1/2 cup sugar
1/2 tsp nutmeg
1 tsp cinnamon
1/3 cup butter


Preheat oven to 450° F.

Combine molasses, baking soda and water. Mix well. Pour into unbaked pie shell.

Combine flour, sugar and spices. Add butter and work until a crumb consistency. Sprinkle over syrup.

Bake 15 minutes at 450. Reduce to 375 and bake for 40 minutes.



Lancaster Shoo-Fly Pie
Favorite Amish Recipes

1 cup Kings syrup
1/2 cup hot water
1 heaping teaspoon baking soda

Mix ingredients together.

Crumbs:
3 rounded cups flour
1 cup lard
1 cup brown sugar

3 unbaked pie shells, 9 inch


Preheat oven to 400° F.

Mix flour and lard until well blended. Add sugar and mix.

Pour liquid into pie shells and top with crumbs.

Makes 3 pies when a large cup of syrup is used for each.

Bake at 400 for 10 minutes, reduce to 350 and bake for 50 minutes. yield: 3 pies
