Onion Pie

It's a family favorite of the author, Betty Douglass, and is traditionally served with Roast Beef. Betty is from Portsmouth, Virginia.

Onion Pie

2 large sweet onions, thinly sliced
2 tablespoons butter or 4 slices bacon, cooked crisp and crumbled, drippings reserved
1 partially baked 9-inch pie shell (prepared refrigerated crust works fine)
6 tablespooons non-fat dry milk
2 teaspoons flour
2 eggs
1/2 cup water
Nutmeg


Heat oven to 425 degrees.

Saute onions in butter or bacon drippings until limp and slightly golden. If necessary, cover pan to soften onions. If using bacon, place crumbled bacon in bottom of pie shell and add sauteed onions; otherwise, just add sauteed onions.

With a wire whisk, mix non-fat dry milk, flour, eggs and water until smooth. Pour over onions and sprinkle with nutmeg.

Bake in oven until set, about 30 to 35 minutes. Serve warm.

Note: Use butter when serving with beef; bacon drippings if serving as the entree.
