Peanut Butter Pie

1 Baked pie Shell
1 cup powdered sugar
1/2 cup peanut butter
1/4 cup cornstarch
2/3 cup sugar
1/4 teaspoon salt
2 cups scalded milk
3 egg yolks beaten
1/4 teaspoon vanilla
8 oz Cool Whip®


Combine powdered sugar and peanut butter. Blend until it has the appearance of biscuit mix. Spread half of mixture on baked pie shell.

Combine cornstarch, sugar and salt. Add scalded milk and mix well. Pour this mixture over beaten egg yolks and cook in top of double boiler until mixture is quite thick. Add vanilla.

Pour into prepared pie shell. When cool, cover with Cool Whip and sprinkle remaining peanut butter mixture over top

You can also make meringue using the 3 egg whites and bake at 325º until brown.
