Pecan Mystery Pie

1 (8 ounce) package cream cheese, softened
1/3 cup sugar
1 teaspoon vanilla
1/8 teaspoon salt
1 egg
1 unbaked 9 inch pie shell
1 1/4 cup chopped pecans
2 slightly beaten eggs
2/3 cup light corn syrup
1/4 cup sugar
1 teaspoon vanilla


Preheat oven to 375.

In medium mixing bowl, combine cream cheese, 1/3 cup sugar, 1 teaspoon vanilla and salt. Beat with an electric mixer until mixture is smooth. Add 1 egg and beat on low speed until mixture is combined.

Spread mixture over bottom of unbaked pie shell. Sprinkle pecans evenly over cream cheese mixture.

In large mixing bowl, combine 2 eggs, corn syrup, 1/4 cup sugar and 1 teaspoon vanilla. Carefully pour over pecans in pie shell.

Bake for 40 to 45 minutes or till puffed and center appears nearly set when you shake it.

Cool completely on wire rack. Store in refrigerator.

Makes 8 servings
